Romesco Sauce/Dip

Originally from Love and Lemons (local)

• 1 red bell pepper (roasted at home or buy in a jar and drain)
• 1 large, or 2 small slices of ciabatta (or 1/4 cup of Panko bread crumbs)
• 1/4 cup hazelnuts or sunflower seeds
• 1/4 cup roasted and lightly salted almonds, blanched and peeled
• 2 garlic cloves
• 2 tablespoons tomato paste + 3 tablespoons water
• 1 tsp smoked paprika
• 2 tablespoons red wine vinegar
• red pepper flakes, to taste
• salt & pepper, to taste
• 2-4 Tbsp cup good olive oil

Adjust all seasonings to taste

Combine all ingredients but oil in a food processor and add oil until it becomes a thick paste
