Sho-fly Coffee Cake

Dad’s book, page 7 (note, written “sho-fly” but I think it should be “shoo-fly”

  • 4 cups flour
  • 3/4 cups butter or marg
  • 1 tbsp sod
  • 2 cups brown sugar
  • 1 cup molasses
  • 2 cups boiling water

Mix flour, brown sugar, and bitter into crumbs. Set aside 1 cup. Combine other ingredients with remaining crumbs. Stir. Don’t beat–> butter is lumpy. Pour into 9″x12″ greased floured pan. Sprinkle crumbs on top.

350 for 45 min.
