Cannelés: followed pink books instructions [Patisserie (LOCAL)], subbing Bulliet bourbon for the brandy. Made batter Saturday, and let it rest until Tuesday afternoon. Followed [Eat Little Bird's instructions[elb] (LOCAL) for baking in silicone which included heating the molds for 4-5 min at 430°F. Then pour the batter into hot molds and cook for 15 min. Then lowered to 375 for 1hr 12 min.
