Meredith's notes with annotations and links:

Cannelés: followed pink books instructions [Patisserie (LOCAL)], subbing Bulliet bourbon for the brandy. Made batter Saturday, and let it rest until Tuesday afternoon. Followed Eat Little Bird's instructions (LOCAL) for baking in silicone which included heating the molds for 4-5 min at 430°F. Then pour the batter into hot molds and cook for 15 min. Then lowered to 375 for 1hr 12 min.
