Tilapia with Old Bay seasoning. Broccoli soup. The soup was not thick enough. The cantaloupe was so good!

Orange Scallops & Brown Rice -- back to top

I was really craving orange chicken but I ended up with scallops. I do not remember the exact recipe. I know I put some orange juice in the brown rice with orange zest. I marinated the scallops in orange juice. The rice was good. The scallops were flavorless.

The chips are the main highlight here. I have made them again and again to varying degrees of success. I saw home made kettle chips at ArtScape and I really wanted them. I will probably create a chips recipe at some point.

Stuffed Cabbage. The turkey was mixed with quinoa as a filler. It was a bit too dry for my taste. Meredith made the sauce. It was great!

Stuffed Mushrooms. Beef and quinoa used with extra in the bowl. There is also laughing cow cheese underneath.

Cheeseburgers -- back to top

Homemade cheeseburgers. Used very lean (92/8) beef. Put a bit too much ketchup in burgers making it taste like meatloaf. Still very good.

Mango Tilapia, Carrot Soup -- back to top

Mango salsa tilapia. Very good carrot soup. Took carrots in chicken broth (though vegetable would have been fine too) with a potato. The potato was to add creaminess. After letting it boil for a bit, I used the immersion blender.

Tilapia was made in the microwave and the salsa was reduced then poured over it.

Very filling and delish.
