Meredith made Pimento cheese from a different recipe 1. We interpeted "grated" as shredded for both the cheddar and the parmesean (which we purchased whole and shreded).

We liked it a lot. I think they may be our "standard" for at least a little bit. It also made a much more reasonable amount
