Eastside Mocktail [Seedlip]

Only major change was to use a whole lime. And I forgot to separately muddle so I pressed and stirred hard. Also, the simple syrup was lavender honey.

Meredith really liked the drink! It was subtle but still felt fancy.

Meredith actually made this a few days earlier but we pushed eating it. Served with leftovers from 2021-10-27

Meredith and my dad put this together doubling basically everything except the rosemary and using vegetarian sausage.

We let it cook extra but it still needed more time! Otherwise, it was very, very good. Especially served with ricotta.

Tuscan White Beans over Polenta -- back to top

Meredith made Brothy Tuscan White Beans (without the garlic bread) and served it on Creamy Oven Polenta [Mediterranean Every Day].

For the beans, Meredith also added 4 Campari tomatoes because she wanted to use them up. And went just a tiny bit light on the olive oil. Skipped crushed red pepper entirely in case Caroline was going to eat it.

It was really, really good. Lots of flavor and worked well with polenta!

Pumpkin Bread and Pumpkin Oatmeal -- back to top

Easy Pumpkin Bread [A Beautiful Plate], actually made yesterday. And Pumpkin Baked Oatmeal [Joy Food Sunshine] with similar changes as noted on 2018-09-25

Cranberry Crumb Bars -- back to top

Meredith made Cranberry Crumb Bars with Mulling Spices [The Smitten Kitchen] for Thanksgiving at Brooke and Nathan's in Colorado Springs. She had some trouble with the microplane which meant she got more pith than she usually likes. It was a bit tart that night but mellowed nicely the next day1 and were delicious

Baked Latkes and Sufganiyot -- back to top

I made Baked Latkes and Easy Sufganiyot [My Name Is Yeh]. For the latkes, the onion was very large so I just did that plus a shallot. I also drained off a lot of liquid with the salad spinner. The potatoes were russet and Japanese Sweet Potatoes

I was running around with the Sufganiyot so I didn't flip them and just flipped them at the end so the nicer side was up. Unfortunately, the bottom rack burned a bit.

I followed the recipe for the Easy Sufganiyot [My Name Is Yeh] using quartered biscuits this time.

Leftover Lunch

Kind of sacrilegious but I topped leftover latkes with a (over hard) fried egg, bacon, and cheese. Very tasty too!
