Soy Chorizo Taco Pasta -- back to top
We added green chili this time, and it was a good move.
Vegetarian Taco Pasta [Shutterbean]
We made fondue for tree decorating. I think we kind of worked out the process really well so we copied 2021-12-04 and 2021-12-26. At least more or less. See those for what we did with each. Large plate: French bread, granny smith apples, mix of brussels sprouts and purple potatoes. Small plate: Pearl onions. Roasted mushrooms.
We opted to not make our own and just used the Trader Joes one:
Lasagna Soup with some shelf-stable tortelinni. We like the fresh kind more but this worked.
Mint Oreo Truffles -- back to top
Oreo Truffles [Kraft Recipes] with mint Oreos. Used about 30 since we didn’t set some aside.
Fish(stick) Tacos with Roasted Red Pepper Relish -- back to top
We had Fish(stick) tacos. It is a really easy and kind of fun way to have fish tacos and do something different with fish sticks. We served it with a pepper relish Meredith made the peppers from Fish Tacos with Roasted Red Peppers [Real Simple] along with ranch (Dions) and feta. The combination was really good. The creaminess of the ranch and peppers with the sharpness of the feta worked well together.
Christmas Tree Pizzas -- back to top
We made Christmas Tree Mini Pizzas [Julies Eats and Treats]. With the leftover pieces, we brushed it with melted butter then used cinnamon and sugar.
We used Rao's for the red sauce and did some with pesto. Also had pepperoni on some.
Baked Blueberry Oatmeal -- back to top
Blueberry Muffin Oatmeal [A Beautiful Mess] and a cheese spread. Perfect Christmas breakfast. Includes chorizo, lemon ricotta (cheese cake cheese) and others
Eggrolls in a Bowl -- back to top
I made Egg Roll in a Bowl [Eating Bird Food]. I was initially skeptical given the lack of oyster sauce but I ended up really liking it.
My notes:
The flavor was surprisingly good and I liked all of the veggies. We will do this again
We made Fondue for New Years with Emily. We followed what is quickly becoming our standard dippers (see 2021-12-04 and 2021-12-26) but air-fried them with our new fryer. I did it all at 450°F with about 17 min for the brussel sprouts, ~20 for the potatoes, and the others I just did by eye (I didn't write it down I guess).
We also had a chocolate mousse cake from Costco. It was for Emily’s birthday but all they had was for New Years. So we did some modifications for Emily’s 28th birthday. And we had Octonaut toppers we never used for Caroline so we used them too. As you can imagine, they were a hit.
