Easter Brunch 2023. This is like the Greek nachos we often make but done more as a salad. Also, Meredith discovered mixing Greek Yogurt and Tahini for a sauce.

Breakfast Enchilada Pizza -- back to top
Last night, we did make your own pizza and had leftover dough. So I made a breakfast enchilada pizza. I did it like Crispy Cheesy Pan Pizza [King Arthur Baking] with the dough ball. I did enchilada sauce on the bottom with Mexican Cheese Blend, green onion (the white parts), and sweet pickled jalapeƱos and scrambled eggs. Once it was out of the oven, we added the green part of the green onion.
It was good but too much dough. I probably could have halved it!
