Ranch, Chicken, and Pepperoni Pasta Salad -- back to top

Keeping the one-a-week trend, I made Grilled Chicken Bacon Ranch Pasta Salad [Ambitious Kitchen].

This time, however, I was making it to bring to a Fourth of July party so I was less worried about calories.

First I doubled the ranch. Probably a bit too much but not bad tasting! I also subbed pepperoni for bacon. I think using bacon is the right answer but I was curious about it. I also used lemon-pepper rotisserie chicken (from Walmart). I did add chopped arugula and skipped the avocado

Hot smoked salmon, chick pease, green (wiggle) beans, tomatoes, and olives.

Dressing was Nicoise-Inspired Salad [Real Simple]. Also had crackers

The original plan was to also use raspberries for red, white, and blue but we ran out

There was really nothing too special about this except that I wanted to document the pizza Caroline made on her own. I started the dough as a circle (or close) and she shaped it into a heart and did it like this. I thought it was pretty cool.



Peach Compote Cups -- back to top

Peach-Compote Dessert Cups [Martha Stewart]. Used gingersnaps instead of amaretti cookies since we already had them.



Smoked Salmon Black Bean Salad -- back to top

Meredith made Spicy Salmon Black Bean Salad [The Kitchn]. She skipped the beans and added 2 green onions. Served on arugula.



Tempeh Tacos and Cucumber + Bell Pepper Salad, with Pickled Chilies -- back to top

The tempeh taco meat from from Tempeh Taco Salad [Eating Bird Food].

The chilies were homegrown and used just the chili part of Curried Carrot Mash With Brown Butter and Quick-Pickled Chillies [Ottolenghi] (though the rest sounds tasty too!)

The Cucumber + Bell Pepper Salad was Sesame Ginger Dressing [Eating Bird Food] and Cucumber + Bell Pepper Salad [Eating Bird Food] but the dressing was actually leftover from 2023-07-18. It was good but there was really not enough dressing.
