Lunch: Black Eyed Peas and Benedictine Sandwiches

Black Eyed Peas Dip

For lunch we had Cheesy Baked Black-Eyed Pea Dip, ham and cheese croissants, and Benedictine Sandwiches [Southern Living] on croissants.

Afternoon (Afternap) Tea

Dinner: Okonomiyaki

We had Okonomiyaki [Dan Leo] though we also called it a vegetable latke. Meredith added a bit of water which she regretted but I thought they were fine!



McGriddle Bites -- back to top

Meredith made McGriddle Bites using Chicken Breakfast Sausage [Downshiftology]

Used half of the sausage called for in the McGriddle bites. Put the remaining sausage in the protein biscuits.

Next time, reduce sage in the sausage.



Easy Cheesy Rice and Red Beans and Rice -- back to top

Easy Cheesy Rice with Cauliflower Rice Red Beans and Rice

This is part of an effort to make one large meal for 3-4 days for the adults. Meredith also made the rice--both for the red beans and the kids food--with a mix of real and cauliflower rice.

The red beans and rice were delicious as always. Maybe even better than usual. The kids were mixed on the rice.



Snowman Pizzas -- back to top

Meredith and the kids made no-knead, no-rise pizza using Halloween Pizza [Yummy Toddler Food] dough.

It was a snowman and a kitty.



Gochujang Tofu Fries and Peanut Sauce -- back to top

Meredith made Gochujang Tofu Fries for us and served the crispy tofu with the peanut sauce from Tofu Buddha Bowls and Peanut Sauce [Real Mom Nutrition]. The sauce was very good too!



Tea Party for Dinner -- back to top

Tea party for dinner. Deviled eggs1, tea sandwiches (cucumber and cream cheese separate for the kids, leftover Benedictine spread for adults), pita pizza, and Boursin peppers.

Birthday Cake Cookie Dough Energy Bites [Ambitious Kitchen]



White Bean Chicken Chili -- back to top

I made a 1.5-2x batch of White Bean Chicken Chili [Eating Bird Food] as our weekly dinners (3 nights). I use most of a rotisserie chicken without skin. Not all of it but at least all of the white meat and most of the dark.

It was a great meal for the week. I would do that again!



Waffled Grilled Cheese -- back to top

I made myself a waffled grilled cheese. I used super fluffy whole-wheat bread so it would compress well. I buttered and salted it and then did it with two slices of munster cheese.

It was fine. Not the revelation I had hoped for but perfectly fine.
