Chocolate Veggie Muffins -- back to top
Made the chocolate veggie muffins. Didn’t blend the liquid ingredients and left out the spinach.
We made (or tried to make) heart pizzas for Valentine's Day. We had some frozen dough from Burque Bakehouse and then we had Scarpaccia Zucchini Tart [Plant You] we used as crust. We love using it as crust!
The dough didn't rise very well and was kind of gummy but very much could be user error.
We had a mix of pesto and/or marinara. I tried to make a pepperoni heart but it slid off.
Spinach Artichoke Orzotto -- back to top
I made Creamy Spinach Artichoke Orzotto [The Kitchn]. Notable changes with addition of arugula and using about 3 oz of multi-color Israeli couscous because we only had 7 oz of orzo.
Very tasty as usual. And while not hard per se, it is a lot of constant work and helps to have everything ready to go.
Crispy Potato Stacks and Salmon -- back to top
I made Crispy Potato Stacks with Garlic Herb Butter [Salt n Pepper Here] with leftover butter (and mustard) of Christmas Sandwiches from Christmas 2024. They were okay. Not the "revelation" I had hoped for but still good.
I also made Crispy Seared Salmon
