Vietnamese Grilled Chicken -- back to top

I would NOT MAKE THIS AGAIN. I made a brine of:

• 2 Tbsp Soy
• 2 Tbsp Fish
• 1 Tbsp brown Sugar
• 1 tsp Pepper
• 1 Tsp Corn starch
• 2 tsp Ginger (cube)
• 2 tsp Garlic (cube)
• 1 Tbsp Oil

and let trimmed thighs sit overnight. It wasn't horrible but nothing like what I've had at restaurants. It was based off a few sources. Next time, I will look in a cookbook!

Mexican Chicken Salad on Zucchini -- back to top

Meredith (and Isaac) made Mexican Chicken Salad (not sure where the recipe was from) and a zucchini and cheese "bread" thing.

I poached chicken breast in water heavily salted with table salt and Lawrys salt. I shredded it in the mixer.

The zucchini and cheese "bread" thing are thin slices of zucchini with crisped cheese to hold it together.
