I prepped lunch for the week. It was inspired by Vegetarian Taco Pasta [Shutterbean] but with real beef. This was made a while ago so I may have details wrong
I sautéed/stir-fried broccoli then I pulled it out, browned the beef, and mixed it all. Not bad though I got kind of tired of it after four days!

We airfried salmon (forgot the document times or sources for them) and then basically made Gochujang Tofu Fries. It was very good!

We made Gochujang Tofu Fries except, as now noted in the recipe, we made the sauce when the tofu was finished and then cooked it together to thicken and coat.
They were very good!
Served with grilled cheese

I found frozen corned beef deep in the freezer. It was from 2022 (or was it 2021?). I "stir-fried" fresh broccoli until it was largely cooked then added the corned beef. I mixed in Sweet Baby Rays and Sriracha sauce and let it coat well.
This was surprisingly good! Maybe a tad salty but that was okay
