I made a very good seitan stir fry. I used the following:

• 1/2 cup rice (see This Post) with the seitan sauce as the water
• 1/2 onion
• lots of broccoli
• peppers
• Seitan (premade with lots of sauce)
• A mix of oyster sauce, soy sauce and teriyaki sauce
• Thai Birds eye chiles

It came out very good. It also made quite a bit but I enjoyed it. Lots of salt though.
