Made a double batch ofCarrot Cake Muffins [Yummy Toddler Food] with the rest of the rainbow carrots [from the other day]. Subbed 1/2 cup of pumpkin for the same amount of applesauce. Ran out. Olive oil for canola. Also, added about 1/2 cup of chopped pecans and 1 tablespoon or so chia seeds.
