Greek Nachos again (2021-08-24, 2022-02-16) with turkey.



Singapore Stir Fry -- back to top

I kind of threw together a curry stir-fry a la Singapore Noodles with Shrimp and Peppers [Spoon Fork Bacon]. I really just used that as a rough guide. It wasn't bad but wasn't a revelation either. Kind of a mess on the pan though!

It was onions, peppers, and snow-peas.

I made gluten-free Blueberry Muffin Oatmeal [A Beautiful Mess]. I used almond milk instead of coconut milk like Meredith did on 2021-10-03. I do not know if there were just differences with what I did vs Meredith or if it was the milk but it didn't stay together well. Still very tasty though! And again almond flour for the topping (which Meredith made)



Chicken Burrito Bowls -- back to top

There really isn't too much here. I kind of just threw together burrito bowls. I flatted and grilled chicken with Montreal Chicken Seasoning. I sautéed peppers and onions a la fajitas. I winged it on Spanish rice by doing 2 cups rice (toasted in butter), 3 cups water, and a 16 (.9?) oz can of tomatoes.

We also served guac, refried beans, sour cream, and tortillas.

It all was pretty tasty! And nothing too fancy or hard.

Seared Salmon -- back to top

Crispy Seared Salmon (and some hotdogs for Caroline). I think I went too heavy on the oregano and I didn't have the pan hot enough. Some of the crispy bits seemed to stick! It tasted pretty good still but not as good as some other times



Banana Bread -- back to top

We made Banana Bread [Joy The Baker] with all three of us helping! There really isn't anything of note except I swear I can taste the bourbon more than usual but we used the same amount!

We did add a tsp of vanilla which may have made a difference. I would do that again!



Romesco Chicken Salad -- back to top

Meredith made a chicken salad out of Romesco Sauce/Dip and Costco Rotisserie Chicken Breast. She used mostly greek yogurt with a little bit of mayo. She also added slivered almonds for some crunch (though it didn't really need it with the cucumber).

We liked it and would have it again!

Arugula Artichoke Orzotto -- back to top

We did Creamy Spinach Artichoke Orzotto [The Kitchn], including the garlic, and with arugula. I was afraid that the arugula would be too powerful so I used about half the amount. I also only added the cheese inside and did not top it with more.

It was very good as usual and the arugula was fine, but I would go back to spinach next time.



Entertaining -- back to top

There isn't too much "cooked" here but we had friends over. They all brought stuff but I a made hotdogs, hamburgers, and BBQ Sauced Chicken.

I used 5 chicken thighs which I cut into four (each) and then skewered, two pieces per skewer. I salted them and let them sit for about 40 minuted before grilling. When they were nearly done, I coated them with Sweet Baby Rays BBQ Sauce and let it caramelize a bit.



Coconut Quick Bread -- back to top

Meredith and Caroline made Coconut Quick Bread [Food52]. The only note was that Meredith ran out of regular coconut so a bit less than half of it is sweetened. It was certainly not too sweet though! I thought it was just a tad dry but Meredith was happy with it.

Next time: Use coconut milk! Add to the coconut flavor!
