We made Grilled Okra with Spicy Chipotle Dipping Sauce [The Kitchn]. We used chopped chipotles in adobo making this much easier!

We had friends over so I bought and grilled a bunch of different stuff.

For the veggies, I quartered zuchinni the long way and then sliced some long bell peppers. I tossed them with avocado oil, salt and pepper. They were decent but would have been better if they hadn't sat while grilling the other stuff.

So nothing really homemade or special but it made this easy and low key!

Meredith made Grilled Chicken Bacon Ranch Pasta Salad [Ambitious Kitchen] including the suggestion to add arugula. We had a leftover rotisserie chicken breast from Taco Cabana so she used that (sans skin) for the meat.



Crudite and Snacks -- back to top

Nothing too fancy. Just a snack-based, veggie heavy dinner. The dip was greek yogurt mixed with tahini (leftover from Greek Taco Bowls) and crunchy pepper stuff from Trader Joes

Southwestern Egg Rolls [Liz Moody]. Meredith didn’t include egg since it wasn’t noted on the page. I’ve since updated it to note that we add egg sometimes

Brown Butter Rice Krispie Treats -- back to top

Meredith made Brown Butter & Sea Salt Rice Krispie Treats [Garnishing Life] for Isaac's birthday. Her note was no additional marshmallows.

I don't think I really tasted the brown butter (or at least it was very subtle) but the salt really added a nice new element!



Parmesan Zucchini Crisps and Leftover Meatballs -- back to top

A bit of a Smorgasbord. We had defrosted and reheated meatballs from 2021-10-15. I was originally going to do something different with the peppers but we had enough meatballs that I just had that.

Meredith made Parmesan Zucchini Crisps inspired by 2017-07-31. She did it in the air fryer for about 15-20 minutes which worked better. We also served some zucchini tots from the store for the kids (picture[full-size])

Finally, we had some sautéed bread-cheese from Trader Joes



Chocolate Coconut Cupcakes -- back to top

Meredith made chocolate coconut cupcakes for Isaac's birthday. She used Mint Chocolate Chip Cake [Cakes by Courtney] for the cake and Coconut Cream Cake [Cakes by Courtney] for the icing.

Perhaps because I accidentally left the Baking Steel in the oven or because of other factors, the cake rose oddly and stuck a lot to the cup cakes. But Meredith was able to free it and cover it well enough with the icing.

They were, unsurprisingly, delicious!



Ranch Pasta Salad -- back to top

I made Grilled Chicken Bacon Ranch Pasta Salad [Ambitious Kitchen] again for our lunch but skipped the bacon, forgot the arugula and avocado, and used rotisserie chicken. I really liked it! I had to add more salt to make up for the lack of bacon. And I ended up heavy on the dressing. But it is pretty easy and tastes great. I also used frozen corn directly. It defrosted enough just in the mix.

Pita Pizza and Boursin Stuffed Peppers -- back to top

Pita pizza instead of ordering. And Meredith made Boursin stuffed peppers. (I can't find the previous time but I will add the link when I do)

Fattoush -- back to top

Fattoush [Jerusalem: A Cookbook by Yotam Ottolenghi]. Meredith used about half the amount of oil. I am not sure if that is a typical change or not.



Seared Salmon and Zucchini Chips -- back to top

I made a variation on my Crispy Seared Salmon.

The first change was that I accidentally used smoked paprika instead of cumin. Not a bad change but not intended.

The real issue was that I tried to up the salt since I didn't have a chance to brine. I used 1 tbsp of salt and that was too much. And/or it didn't spread very well. I really need to remember to salt it the first time correctly.

I also think I cooked it too hot...

Meredith made Zucchini Crisps. Light dusting of Parmesan and then 15-20 min in the air fryer at about 450°F.
