I came across this recipe for lasagna soup from Paula Deen's son and simply had to make it. Lasagna is the ultimate comfort food in my book, and this sounded like a pretty healthy rendition. It was in fact delicious (though a bit anise-y for my preferences), and I imagine it will go into our regular rotation. I followed the recipe pretty closely, except I like to sneak in extra veggies when I can. So when I remembered we had a block of frozen spinach, I decided to defrost it and throw it in. Also, we topped it with grated Toscano instead of Kraft fake parm, and we substituted whole wheat penne for lasagna noodles.

I made the roasted veggie and chicken sausage thing with italian chicken sausage. It was pretty good though I went light on the potatoes to save some calories. I liked it a lot but I think I preferred it with other types of sausage. I used artichokes, onions,potatoes and a bit of sweet potatoes.

Spaghetti Squash with Sausage and Kale -- back to top

This was inspired by the recipe below, but I did make a lot of changes. I halved the sausage and used turkey sausage. I also completely skipped the sun dried tomatoes. I halved the broth and wine though I ended up adding more (since I still used a full squash). I also used dino kale. I also combined the squash with everything (including the sausage) in the pan at the end. I also did the squash in the microwave instead of the oven. There was no need for a slotted spoon since the turkey sausage was low in fat, there was no need for a slotted spoon. The basil and the parm cheese really brought it all together. (yes, I used fresh basil, but I skipped all of the mozzarella).

Everything was very good. Lots of food with lots of veggies and really not too many calories. I would be curious how it would be with sun-dried tomatoes (though I still wouldn't use the oil). I'd definitely make it again though.

I made my pretty standard roasted veggies but I used some different things, and I cooked it at a higher temp (425) but for less time (20 min, then 10-15 more). The didn't do any potatoes but instead did a giant celery root. I actually made enough that I saved a bunch for lunch the next day. The other veggies were jalapeno peppers, bell peppers, carrots, parsnips, turnips and onion.

Pretty simple meal. I used to do this pretty often.

I cut and roasted:

And probably other stuff I do not recall. I chopped it all, tossed it with olive oil, and seasoned it with salt, pepper, garlic powder, crushed red pepper, and rosemary.

I roasted it for 20-25 minutes at 425, then added diced chicken sausage, tossed it, and did another 20 minutes.

As usual, it came out very good. Lots of food but no starchy vegetables. It had a kick from the poblanos and the crushed red pepper (something I sadly found out were spicy after a trip to the bathroom....)

We made another quick meal. Just sautéed some onions and peppers in a bit of butter. We did this in the cast iron to get it nicely cooked. Then added chopped up Trader Joes' Spinach, Fontina, and Roasted Garlic Chicken sausage.

Grilled Sausage and Vegetables -- back to top

Pretty simple meal but it worked well since we didn't want to spend a ton of time. We grilled 4 different types of sausage (listed below) with some broccolini (tossed with olive oil, salt, pepper, garlic powder, and crushed red pepper), and some Chinese eggplant (just salt and pepper)

The sausages were all from Whole Foods. Roughly in order of our favorite

We just grilled it all on medium and kind of winged it. I am sure I overcooked it a bit but they are fatty enough that it was fine. The broccolini was pretty good. Maybe a bit overcooked.

Pretty standard and simple meal. I cut up

I tossed them with olive oil, garlic powder, onion pepper, salt, and pepper. I roasted them for about 30 minutes and then added whole30 compatible chicken sausage.

I think I should have spread this out into two trays. It was good but it kind of steamed. I like how easy this meal is!
