Green Eggs on Toast with Bresaola and Cheese -- back to top

As usual, when I say "green", I mean we used the green cilantro dip. There really wasn't too much to this meal since, after all of the shopping (and sampling/snacking) we were not that hungry. We had fried eggs (light amount of butter), Bresaola (from Whole Foods, but I want to try making it still) and various cheeses. I think it was some Hatch Green Chili Cheddar and Gouda.

Not a fancy meal by any standard but still, really good and simple

Sweet Potato Toast -- back to top

Apparently, one of the new hipster trends is sweet potato toast. You thinly (~1/4 in) slice a sweet potato and then toast it. We tried just that, you we had to run the toaster on the highest setting twice.

Anyway, we had done it earlier in the day with cream cheese (not pictured) and it was kind of cool so we tried it again with different toppings.

We did:

• Butter with Penzeys' Fox Point
• Guacamole
• Butter with some brown sugar (put back in the toaster for a bit)
• Butter with some honey

They were all pretty cool. Not sure if I would say they take the pace of real toast, but fun and new.
