Tortellini with Sausage and Mascarpone

Sunday, October 16, 2022, 07:13 PM

I made Tortellini with Sausage and Mascarpone [What's Gaby Cooking] for Meredith's birthday. I did 1.5x the recipe and used Roa's (whole can so a tad heavy on the sauce). I used tortellini and also some Cascatelli pasta. It was also loose chicken sausage.

It was, like last time, very good and very decadent.

Pumpkin S’mores Cookies

Sunday, October 16, 2022, 06:33 PM

Meredith and Caroline made Pumpkin S’mores Cookies. They followed the recipe pretty closely except they mixed marshmallows in and then also added them on top after reading it. The mixed in ones, did, in fact, get totally absorbed.

They were pretty good. Nice flavor to them. Maybe a bit of an odd texture but not bad.

Crispy Seared Salmon

Crispy Seared Salmon. A bit salty today and maybe a tad overcooked but still delicious.

Black Bean Sweet Potato Chili [What's Gabby Cooking] with quinoa.

Turkey, Basil, and Pistachio Patties

Meatballs with the basil one. Double batch.

Chorizo Burgers and Smacked Cucumbers

Monday, September 12, 2022, 07:20 PM

This was inspired by one of the "Steed Food <place>" shows but I forget which. The idea was to mix Mexican chorizo with a burger. We prefer the soy chorizo so that is what I used. It was 1 lbs of 80/20 beef and a pack of Trader Joes Chorizo. I followed Smash Burgers [The Food Lab/Serious Eats] for cooking them (8 patties). It worked okay but they were large. And cooked a bit differently (plus, I had to handle the beef more than you're supposed to for burgers). We had them not-stacked but we did do open face. I did mine with an over-hard egg too!

They were pretty good but reminded me of some beef jerky I've made before. Probably the beef cooking a lot combined with the smoked paprika in the chorizo. They did brown a bit more but I expected that.

Meredith also made Smacked Cucumber in Garlicky Sauce [Every Grain of Rice] with home-grown cucumbers. Easy, delicious, and spicy!

Calabacitas on the Grill

With homegrown zucchini

Tuna Cabbage Crunch and homegrown veggies in bento boxes

Saturday, September 10, 2022, 10:17 AM

Meredith made Tuna Cabbage Crunch (kind of like 2021-08-02) except just one can of tuna and all Greek Yogurt. Topped with homegrown cucumber!

Caroline's sandwich was cream cheese and homegrown cucumber on brioche. We also had homegrown tomatoes with salt and homegrown basil.

And leftover Calabacitas with homegrown zucchini
