These are better baked than fried!
This is not exact. It is just a general idea
With a food processor grate the potatoes, onions, and squash (or sweet potatoes). Add eggs and mix well (and beat eggs). Sprinkle the flour and work it in until it looks like potatoes in a thick pancake batter. Add salt and pepper
Scoop unpacked 1/4 cup portions onto a heavily greased baking sheet lined with nonstick aluminum foil. Flatten slightly (but not too much). Spray again with oil (a lot!). You may need to add more flour as needed.
Bake at 400°F (+ convection) for ~20 minutes. Flip and do another 10-15 until crisp.
