I had some leftover potatoes from yesterday's moussaka so I made home-fries. I first sauted a really small onion and then I put in diced leftover potatoes (They were parcooked from yesterday). As they neared completion, I added some (too much) salt and pepper. I finally topped them with two over-medium fried eggs. A fairly quick and simple breakfast!
