I made a salad for lunch and dinner. It wasn't anything too special but I figured I'd note it. I stri-fried the shrimp. While better than the calamari, it was also kind of flavorless. I am starting to wonder if the quick-defrost causes flavor loss. Anyway, What you see is as follows:
4 oz stir-fried shrimp, chopped. Stir-fried with a bit of crushed red pepper and very little oil. Cooked fast but wasn't very flavorful [4 points]
2 hard "boiled" eggs. 11 minutes on the steamer (with the water boiling_before_you put the eggs + steamer on). Flash cooled. Fully cooked the whites and most of the yolks. Just a bit soft at the very center. Perfect! [4 points]
Croutons. 1 slice of rye bread with some pam and garlic powder. Toasted and then chopped [2 points]
Grape tomatoes, sliced
bunch of carrot, chopped
1/4 small red onion, chopped
2 serving (14 grams) McCormick Salad Toppins[sic] [2 points]
Balsamic vinegar (not vinaigrette)
Pretty simple but good meal!
