(null) Quick pho again. Still fine-tuning a reduced spice version of this. I made it with

2-3 onions
ginger
1 gal water
4 star anise
1/2 stick cinnamon
1 Tbsp coriander
1/2 fennel

Plus the normal 1/4 cup fish sauce at the end.
