A friend was visiting so I made us waffles and bacon for breakfast. The bacon was just baked as usual. For the waffles, I did some research on batters. I didn't want to take the time to do a yeast batter and I didn't have buttermilk for those types. I settled on this one from The Pioneer Woman (local link[@rev]) which uses beaten egg-whites (and still baking powder) to give it the fluffy appearance. I think I used mostly white whole wheat flour since it is all we had but it worked fine.
I thought the waffles were ok. Not amazing but not really bad either. I was unhappy with the waffle maker which seemed to cook the edges a bit more as you can see from the photo. It wasn't a big deal but it is not desired.
