I made Tofu Satay[@rev] as I’ve done before. This was the first time I actually used pineapple juice. The coconut milk was from Trader Joe’s and it’s awful. It’s entirely non homogenized and super chunky. You can see it in the photo below. The fats did melt as I grilled the them and coated the tofu.
They came out pretty good and the baby even likes it (especially with the peanut butter sauce).
Meredith made the easy-version sauce and it was really good!
