Meredith made the One Pot Tomatoes, Beans, and Orzo[@rev] dish we've had a few times. Instead of spinach, she put some cauliflower rice directly into it. That worked well to add bulk and veggies though I also liked the spinach in there.
Served with some mozzarella balls and pesto.
