Meredith made English Jacket Potatoes from Cup of Jo (LOCAL[@rev]). They are basically just baked potatoes but done in a way to make the skin really crispy (which worked well!).
We served them with sour cream, greek yogurt, canned chili, and green onion.
Also just a very easy meal!
