Baked Latkes and Sufganiyot

I made Baked Latkes[@rev] and Easy Sufganiyot [My Name Is Yeh][@rev]. For the latkes, the onion was very large so I just did that plus a shallot. I also drained off a lot of liquid with the salad spinner. The potatoes were russet and Japanese Sweet Potatoes
I was running around with the Sufganiyot so I didn't flip them and just flipped them at the end so the nicer side was up. Unfortunately, the bottom rack burned a bit.
I followed the recipe for the Easy Sufganiyot [My Name Is Yeh][@rev] using quartered biscuits this time.
Kind of sacrilegious but I topped leftover latkes with a (over hard) fried egg, bacon, and cheese. Very tasty too!
