We had a big get together for Memorial Day. It ended up being a very large gathering! Basically, nearly everyone we invited said yes. And there were lots of kids.
We made some stuff, defrosted others, and the rest was from our guests
- Brisket: I made Sous Vide Smoked Brisket Recipe [Serious Eats][@rev]. It was with "Choice" level meat so I was a bit unsure but I think it worked well. I did the normal 155°F for about 30 hours. The only change I did was to add salt and pepper rub again before the oven. This was a mistake! It was so spicy. It didn't need that. Next time, I'll just dry and not reapply!
- Pulled Pork: I pulled out ~6 lbs from the freezer. I didn't note when I made it but it was my usual homemade sous vide recipe[@rev]. It was fine as usual but not very popular.
- Southern Banana Pudding: Followed a doubled version of our usual recipe[@rev]. It too forever. The recipe says "10 prep, 20 cook" but it was more like 20 prep, 45+ cook on the stove, 20+ assemble, then 25 in the oven. In the recipe's defense, I did double it which meant that for the same heat on the stove, it should take twice as long to thicken. But this was a pain. Glad we had most of the rest of the food prepped because this took so much longer than expected.
