Chicken Cordon Bleu And "Fried" Zucchini -- back to top

This meal was inadvertently largely from Hungry Girl. The chicken was roughly the recipe from "Hungry Girl 1-2-3" (p.94) with some modifications. First of all, I used tenders instead of a big chicken breast. And, I used prosciutto instead of ham because we had it leftover. Ham is lower points than prosciutto so I used very little compared to what I would have liked to use. Finally, After they were rolled, I rolled them in Fiber One bread crumbs (also, a la Hungry Girl).

The zucchini was based on the same one I always use. Except I kind of just winged it with some other spices as well. I used the mandoline to slice them thin. While slicing was faster, it took a long time to egg and "bread" crumb that many. I twas well worth it because they were much better with the thin slices.

Chicken Cordon Bleu with leftover lentil soup and moussaka -- back to top

The chicken was the same basic recipe as last time except we used lite jarlsberg. It was much easier with that but I didn't like it as much. First of all, it leaked more and second of all, it congealed in it. Also, 2 of them were with Canadian bacon and not prosciutto because we ran out.

We also had the leftover moussaka from a while ago and leftover lentil soup from yesterday (it was so good).

Vegetarian Bean Fajitas, Fiber One Fried Onion Rings and Spinach -- back to top

The fajitas were just onions, peppers, mushrooms and kidney beans with fajita seasoning. I would like to make my own seasoning sometime but this worked well enough. We added the red kidney beans right at the end so they didn't get too smashed. The beans were there to be a source of protein and some substance. We made the onions rings inspired by the Hungry Girl Recipe I copied below. We really just winged it but it was helpful to have the recipe. They were pretty easy with two people so you that I did not get my hand full of egg. Finally, we made sautéd spinach because it was getting old and we wanted to use it.

Not really anything special. This is the same as what we did on 2010-10-27, again with beef instead of chicken. We did not have mixed frozen veggies so we just used a mix of frozen peas and corn. Not much else to say

This was basically the typical Hungry Grill Enchilada Casserole except with beef instead of chicken. Also, we discovered that the healthy option condensed soup was healthier than the 98% fat free. I do not know if it made a difference, but it was good in here.

I do not recall what else I did differently or changes, but it was very good!

We also had steamed edamame on the side which we both enjoyed!
