Breakfast Burrito for Dinner -- back to top

This was about as simple of a meal as they come. I sliced about half of a Gimme Lean sausage, fried two eggs to over medium, put it on a warmed up tortilla and topped it with a tiny bit of part-skim mozzarella cheese. It was perfect in that it was fast and easy.

I wanted a fast and quick meal so all I did was top some chicken with Emril Essence and cook it on the pan. It was actually really good and flavorful. The only thing is that I must have missed the thickest part when I took a temperature reading since there was a part not really cooked enough. I threw it in the microwave (which of course, over cooked it all)

Tuna Tataki and Pan-Seared Gem Lettuce -- back to top
Meredith and I made tuna tataki from our regular recipe. Whenever I make it, I have trouble getting the ginger to stick but Meredith doesn't seem to have the problem. My guess is that I usually slap-chop the ginger and she chops it. I think chopping keeps it drier. We also didn't make the sauce and instead just did 1:1 fresh lime juice to low-sodium soy sauce. Anyway, the tuna came out really, really good. Lots of flavor and well cooked.
I made pan-seared gem lettuce. It was based on this Kitchn post (local). We followed it pretty closely and it worked well enough. I think I need to take the heat down a little bit more. Especially since I added the lemon juice and it basically evaporated right away. Still, it worked well enough and was really good (except I used too much salt).
Overall, a pretty easy and healthy meal.

Roasted Cauliflower with Fried Eggs -- back to top
I was out late for something so Meredith made the cauliflower. She used the same seasonings I used on 2016-01-06 though I do not think she followed my method (I think she used less oil and a lower temp). Still, they came out fine. We topped it with a fried egg and Sriracha. Super simple!
We made Flat Out Pizza. Pretty simple and easy. We used Flatoush Flat Bread (~90 cal each).
I did one with BBQ sauce and one with Vodka sauce (the low cal one we often use for soup). I used rotisserie chicken and roasted red pepper with low fat mozzarella cheese. I also topped it with a bit of sriracha and salt (the cheese needed it).
Meredith also used the vodka sauce, red pepper, and rotisserie chicken capers plus the mozzarella.
I did it at 400°F for about 13 minutes.
Honestly, this is a pretty easy and mediocrely healthy. It is fast and the kind of perfect thing for a weeknight.
We realized we hadn't had taco stew in a long time so we decided to have it. We used the regular recipe but also added some worcestershire (which worked pretty well). Not really much to it. It is a simple and easy meal.

Salmon and Chicken Burgers -- back to top
Quick and fast meal. A chicken burger with some vodka sauce and roasted red pepper and a salmon burger with a little bit of mayo and Diablo sauce on the bottom plus more red peppers on top.
Quick, easy, and good.
Asian Lettuce Wraps -- back to top
We made Asian Lettuce Wraps without many changes except to add green onion. And we used rotisserie chicken
These are so easy and really good. We should keep this in mind more often for fast meals (and possibly lunches)
Eggplant Poached Eggs -- back to top
Not the prettiest meal, but we made a very quick meal of Trader Joes Grecian Style Eggplant and poached eggs. Just put the eggs in the stuff on a hot pan and served it over bread. It was very easy, very quick, and pretty good. The eggplant stuff is not exactly healthy (lots of oil) but we don't use too much of it.
I also made myself a very quick salad of tofu and roasted red pepper (also both from Trader Joes...) in some green mix. Not much to the salad either.
Chicken in Vodka Sauce over Zucchini Noodles with Broccolini -- back to top
This was a quick meal. Meredith had the idea to use up the rest of the vodka sauce. We had some chicken tenders so we cut them up, tossed them in some flour (with salt and pepper). I heated up some oil with a little bit of butter and sautéed it for a bit. When it was close to being finished, I tossed in the rest of the sauce and some zucchini noodles (there wasn't much left but it was enough). I let that simmer for a bit
We also roasted some Broccolini with just salt and pepper and roasted at 400°F for about 18 minutes.
I liked it enough. I think we should have used a bit more salt on the chicken and maybe a little less sauce.
Roasted Vegetables with Sausage -- back to top
This was a pretty simple and quick (prep-wise).It is the standard style roasted vegetables we've done a ton of times. I chopped up:
We tossed them with oil, salt, pepper, garlic powder, and rosemary. Roasted it for around 30 minutes at 400°F. We then cut up some fully-cooked jalapeño chicken sausage for another 10 minutes.
It was all very good. I especially liked the delicata squash! (That stuff is good!)
Roasted Cauliflower and Soy Chorizo -- back to top
Not much to this. Our standard roasted cauliflower with soy chorizo. I tossed cauliflower with some oil and smoked paprika. Once it was roasted for about 30 min at 400°F (with convection). Meredith then heated up about half of a pack of soy chorizo with a bit of oil and capers (plus juice).
It was quick and easy!
Stir-fry Broccolini with Chicken Sausage -- back to top
We had been doing a lot of cooking and we were kind of tired so we went with something fast. We had defrosted a thing of chicken sausage already. I cut up about 1-1/2 lbs of Broccolini and then stir-fried it with some salt, pepper and then, once more cooked, some Penzeys Fox Point plus garlic powder. I then threw in 4 chopped up chicken sausages.
I liked it a lot and it was a good amount of food that was pretty healthy.
