Vegetarian Taco Pasta [Shutterbean]

Last night, we did make your own pizza and had leftover dough. So I made a breakfast enchilada pizza. I did it like Crispy Cheesy Pan Pizza [King Arthur Baking] with the dough ball. I did enchilada sauce on the bottom with Mexican Cheese Blend, green onion (the white parts), and sweet pickled jalapeƱos and scrambled eggs. Once it was out of the oven, we added the green part of the green onion.
It was good but too much dough. I probably could have halved it!

This is like the Greek nachos we often make but done more as a salad. Also, Meredith discovered mixing Greek Yogurt and Tahini for a sauce.

Easter Brunch 2023. Not many people could make it but we had matzoh ball soup, Southern Deviled Eggs [Paula Deen], various salads (from guests), Crispy Seared Salmon, Christmas Sandwiches, Hummingbird Cake [Southern Living] Easter Bunny Cake [Jenny Steffens], and [failed] Marble Matzoh Crunch [Salt and Serenity] (see photo(full size))

Moroccan Chickpea and Squash Stew [The Kitchn].
Used frozen butternut squash, diced tomatoes, and really old dried apricots. Used Target Saffron rice
