Cauliflower & Sausage Casserole

I made a cauliflower casserole from this Kitchn recipe (and copied below).
I prepped it during the day and to then becooked from the fridge later. I followed the recipe pretty closely with the following notes/changes:
Steamed the cauliflower for 5 minutes instead of boiling it
Used a can of diced tomatoes so I added it all together
We used chicken sausage from Whole Foods
The thyme was from Meredith's garden
Instead of regular breadcrumbs + parm cheese, I used panko and nutritional yeast to be non-dairy. I took 2/3-3/4 cup of Panko, added 1/4 cup nutritional yeast. Added some garlic powder and italian seasonings. Used the wooded mortar and pestle to grind.
I sprayed a little bit of pam on the finished dish before the oven to help the breadcrumbs crisp.
Other than those changes, I stayed pretty true to the recipe
The final result was mediocre though everyone else seemed to like it. I should have given it more time in the oven (likely since it was from cold) and I should have steamed the cauliflower for longer since it was a bit undercooked. Also, it was extremely wet. So next time: more oven, more steam, more cooking down the sauce. The topping worked well enough.
