We made Hamentashen with our guests. I actually made the dough on Thursday night and we didn't get around to making it until Saturday. I used my Dad's dough recipe[@rev] with 225 grams of sugar (halfway between the ranges). And I did it with butter this time unlike last year. Also, Hamentashen are like pie cookies so it worked well for Pi day.
We had a variety of fillings. Some worked better than others. But what helped a lot was to have spacers on the rolling pin. It made rolling it out very easy.
Fillings:
Lemon Curd: I know that lemon is a common flavor but I am not sure what they use for it. We used Trader Joes Lemon Curd. Very flavorful but it also kinda melted and poured out
Strawberry Jam: Pretty simple. It worked well but was a bit too strongly flavored
Fig butter: Very good. One of my favorite fillings. We got it at Trader Joes
Pepper and onion jam: Ok, this was strange. I kinda liked it but Meredith thought it was gross. I liked the idea but I wouldn't do it with this one again
chocolate chips: Pretty standard
I think that was about it. We cooked them on the tray with parchment. I wanted to use silpats but I cannot find them.
