Asian Lettuce Wraps and Asparagus -- back to top

We made Asian Lettuce Wraps following the same recipe from last time1 except we made a bit more. Also, we added a good amount of bean sprouts to give it crunch and more volume. Overall, it was fairly easy and pretty good. The cellophane noodles are strange but they worked fine for this. I wonder how it would be with some other noodle combination.
We also had steamed asparagus. I do not know why but the asparagus was extremely flavorful. We literally just steamed it. Must have just gotten lucky.

Poached Eggs over Roasted Asparagus -- back to top

I wanted something fast and light. I roasted asparagus as I did on 2013-05-20 basically the exact same way. While that was going, I poached eggs like on 2013-05-01. Note that the time in the water was about 4-5 minutes. I thought they were overcooked but the yolks were still pretty runny.
The meal was pretty good. Kind of plain, but it was fast

Thai Stir-Fried Asparagus -- back to top

I threw together another asparagus stir-fry. It was roughly inspired by broccoli beef but with a Thai bent. In particular, for the sauce, I used:
I made the stir fry first by stir-frying (from frozen) 1/2 pack (125 grams) of Gardein "Beef" tips(5 pp total). Then I used a bit of oil and did half an onion with garlic towards the end. I then stir-fried about a pound of asparagus.
When I added the sauce, I quickly realized that it was too much. It thickened nicely but was too much of it. I will have to reduce it in the future.
It was actually pretty good though way too salty! I will work on that in the future.

We made a quick dinner. I made the usual seared salmon with Meredith's cilantro sauce/dip. There wasn't much more to this one. Though I do not think I would waste the dip on this again since the flavors didn't really come through much.
