Carrot Cake Pancakes and Bacon -- back to top

I made carrot cake pancakes from the usual recipe. This time, I actually used walnuts which I had skipped in the past. I do not know what caused it, but it was super thick. Even before the carrots. With the carrots, it was still pretty dense. I tried to let it cook for a long time to make sure it was cooked through. Still, it ended up being a bit raw inside
I also made bacon in the oven. I used the "trick" where you use a cooling rack in the pan so that the bacon grease falls off while it is cooking. There was extra bacon so I cooked that in a pan as well but without the rack. Both came out very flat and well cooked, but the one without the rack was actually better. I guess because it kept frying in its own oil as opposed to it dripping down. I'll keep that in mind for next time and probably skip the rack.

BATs (Bacon, Avocado, Tomato) -- back to top

We had a pretty simple breakfast: BATs (Bacon, Avocado, Tomato) We had Whole Foods' Black Forrest Bacon which we baked at 350 until it was crisp (Best bacon and best method to bake it). We also had a not-quite-ripe avocado, tomato slices and Brummel and Browns. The bread was a few slices of rye from last week's meals and small (slightly stale) rolls from Whole Foods.
Simple and good meal.

Breakfast of Leftover Pimento Cheese and Bacon -- back to top
We had a breakfast of leftover pimento cheese plus some Chipotle Cherry bacon from Whole Foods. We also had some fried eggs, and toast from the leftovers.
Pretty simple and easy breakfast.
BLTs with Home-Grown Tomatoes -- back to top
We wanted a quick and easy dinner since we had plans and knew we would be eating late. Also, Meredith had been wanting to use some of her ripe tomatoes from her garden. This seemed like a nice and easy meal.
We made BLTs by baking the bacon (though some pieces were still a bit fatty so we microwaved as needed). I had mine (1.5 sandwiches) with Trader Joes lite mayo.
Anyway, you can see the tomatoes better in the photos below. They came out super juicy and very, very flavorful. They also had a really cool structure to them.

We made BLTs again. Even though we just had them on 2015-09-15, we still had bacon and Meredith had a few new ripe tomatoes.
Not much else to the meal. Very good and very easy... besides growing the tomatoes.
BLATs -- back to top
We made B acon, L ettuce, A vocado, and T omatoes (BLATs). There wasn't much to it. We used the rolls I talked about yesterday. This worked well since we had leftover bacon from the other day plus some in the freezer (and we're trying to use up what's in there). We did the bacon in the oven as usual.
Of course, while making it we had a problem: The bacon for the BLAT went SPLAT!
Oh well! That's why they may 5 second rules. And when you use that, it's why they may 30 seconds rules!
Anyway, there wasn't much more to it. They were good but kind of hard to eat since the rolls were pretty thick.
Brussels Sprout Hash with Bacon -- back to top
Meredith and I made brussels sprout hash with bacon. We started with four slices of Whole Food Black Forrest Bacon which we fried up in the pan. When that was getting crisp, we threw in a bag of sliced brussel sprouts plus
She also deglazed it as we went with some white wine.
It was a nice, quick, and easy lunch. We didn't want or need a ton of food since it was late, so this worked well.
Mustard Brussel Sprout Hash -- back to top
We made a Whole30 version of the brussel sprout hash we made before. The differences were that we used regular (French's) mustard since Dijon is not Whole30 and we deglazed with broth. Of course, we had to find sugar free bacon:
Other than that, we followed the steps and idea as last time 1.
It came out really good. You could tell it was a different mustard but not in a bad way. I would say this is a quick-ish meal and pretty good and easy!
Actually, I even baked delicata squash but they were old and didn't taste very good. ↩
