Magic Dusted Tilapia and Butternut Squash fries -- back to top

I didn't feel like doing a lot of cooking so I took some frozen tilapia, put leftover magic dust form the other day on it and baked it in the toaster oven. I also made butternut squash fries. The mandolin had some trouble getting through the squash but it wasn't too bad in the end. They didn't come out very crispy but I still liked them.

Taco Stew and Butternut Squash -- back to top

I made the pretty standard taco stew. Really nothing notable at this point. I made it so many times in the past. I also made butter nut squash. I cooked it at 425 for 20 minutes, flipped it and then for another 15-20 minutes.

The points are

Beef...8.5

Assume the whole thing was 24. There was about 2.5 servings.

So say 15 for tonight and 10 for lunch.

Roasted Butternut Squash, Salmon Burgers and Shrimp -- back to top

I roasted some butternut squash in the oven. I do not remember the temperature or time which is unfortunate because I always seem to forget and have to look it up. I also had salmon burgers and shrimp. I had only a few shrimps left. I did both on a well-warmed-up grill pan. I cooked the shrimp from frozen and they seemed to come out fine. The burgers were also very good but that was not a surprise. I let the salmon really cook which was good since I think I tend to undercook it.

Butternut Squash Fries and leftovers -- back to top

There wasn't much to this meal. I tried to make butternut squash fries. I used the mandoline to slide them and then I baked them for about 30-40 minutes at 425. I do not know if I should have gone longer, or if the pans were too crowded, but they were pretty mushy. I had seasoned them with cayenne, hot (not smoked) paprika, garlic powder, salt, and pepper.

I also had a leftover moussaka from the other day. Not much to say here except I used the sensor frozen dinner setting on my microwave which did a great job! It was uniformly hot.

Seared Scallops over Butternut Squash Noodles -- back to top

We made a pretty quick meal. Meredith seared the scallops and they were good but there isn't too much to say about them.

I tried making butternut squash pasta with the spiralizer. Most recipes I saw online just said to cut it smaller and do it with some force. I am not generally opposed to that but a friend told me she did it with microwaving it for 5 minutes first. I cut the main part in hald and tried that.

It only partially worked. On both of them, it was too soft and the spinner part would tear it up. See the photos below. I wonder if I wasn't supposed to do 5 minutes. I'll have to ask.

Anyway, I sautéed it with butter (~1 Tbsp), garlic, and crushed red pepper. Came out garlicky and good.
