Antipasti Selection -- back to top

Meredith put this meal together. It was basically like antipasti and/or tapas for dinner. A very Meredith style meal.
On the main cutting board (clockwise):
The salad (pictured below) was a burrata (Italian cheese that was like mozzarella on the outside and ricotta inside) with prosciutto, "power" greens, and black and green figs. The green figs were fine but the black ones weren't quite ripe so we tried to brulee them (See the photo below). The salad was drizzled with balsamic vinegar.
Finally, we had Tuscan melon (fancy cantaloupe) to be eaten alone and paired with the cured meats.
The meal was a lot of prep but really, really good. Lots of variety and good complimenting flavors. My fav was mixing the salty and dry (and lean) bresaola with the almost creamy burrata.
We would do this kind of thing again!

A Meredith meal if there ever was one (though this could give it a run for it's money).
We made basically made a Smorgasbord of different things. We had:
It was pretty good. Not a ton of food, but was certainly enough

This was quite a meal! In the past, we have called it Antipasti Selection and Smorgasbord (...) but really, we just call it a Meredith meal.
There were lots of parts to this meal. I will try to hit on most of them.
We were at Whole Foods and they had oysters for $1 each. We like the idea of oysters so we bought a dozen with 3 different kinds as you can see in the photo. I shucked them and we served it with lemon and tabasco (forgot to buy cocktail sauce). Well, I return to us like the idea more than actually having them.
The Malpeque were easiest to shuck (Wianno were the hardest) but I was able to get to all of them. However, we each has one good and one awful W ones. Pretty bad.
I think we will hold off on oysters for a while. They just aren't as worth it as we usually think they will be. Again, the idea was a nice start to the meal.
Meredith had made (but overcooked) white beans for this meal but we weren't really eating them. She had the brilliant idea to make white bean dip. We used this recipe (local) for inspiration but she really just did it all to taste with the following:

Overall, it was a great way to use the beans. The end result was a bit smokey but very garlicky. Not really bad but definitely a bit too much.
Meredith had see this Kitchn recipe (local) and used that to make them. We used a combination of black seedless and "Holiday" grapes (that's what the bag said). We tossed them with olive oil, salt, pepper and rosemary.
You can see from the photos below, they were really pretty. They tasted pretty good too. A bit like wet raisins (as one would expect) but it was still a funky thing to do with grapes
The rest of the meal was the cheese and crackers. We had a variety of cheeses and also salami. And sliced baguette (not pictured)

We liked them all. The Rosso Di Lange was brie-like and I liked it with the salami. The others were good plain, though Meredith didn't love the Lenberg

A Meredith Meal! Brooke was visiting and we wanted to make a "chill out and relax" type meal.
We made Crab and Corn Salad (from 2013-08-17), Romesco sauce and then a tray with:
Whole Foods stocks a different kind than I've had elsewhere. I think it is supposed to be closer to prosciutto but I think this one is thicker and better ↩
We had a Meredith-style meal for dinner. This was one of the easier ones since we usually at least make something for it. In this one, we bought all of the stuff.

Meredith Meal with Spicy Lentil Dip -- back to top
We had a lite Meredith meal. The main focus was the spicy lentil dip, and other than that, everything was pretty standard (except they no longer have bresaola at Whole Foods).
The cheese was Cinnamon Toscano and a Parmesan-Gouda. We had a mix of a fresh green chile bread and some leftover little rolls from a restaurant, cut up. Finally, there was green apples and soppressata.
But the main hit was the Spicy Lentil Dip. We used the same recipe as when we made it a while ago on 2013-03-18. We followed the recipe pretty closely using the lite-vodka sauce for the tomato sauce. And I suspect Meredith went heavy on the cumin. I went a bit heavy on the Sriracha, but 3 Tbsp is a lot already. And I think Meredith used either grits of polenta instead of cornmeal. Oh, and we used fresh-from-the-garden basil instead of parsley.
I liked it a lot! Spicy, but interesting and flavorful. It was still a bit gritty (from using grits instead of cornmeal?) but not too bad and well worth it. Intricate flavors of the lentils worked well with the spice. We will add this to our dips rotation! (and maybe [??] put it in our recipe book?)
Meredith Meal and Calabacitas -- back to top
We had a Meredith Meal and also some calabacitas. We usually have more veggies but this time we did the calabacitas.
For the "Meredith Meal", we had the the following:
The calabacitas were our pretty typical ones. Like I talked about here the trick is to use butter. Not to go crazy on it, but just to not skimp either. I did onions and three (!!!) serranos plus a bunch of squash. I let it go until the onions have nicely caramelized.
Whole Foods will apparently cut off the fat for you. It was great! They could cut it super thin and you aren't paying for what you don't want. ↩
Another of our typical Meredith Meals that we like to do on some Fridays.
Not pictured above is that Meredith also made guacamole. It wasn't her usual one with being really heavy on green onion and jalapeno and no lime or tomato. Still, it was pretty good.
