Púrpura (purple) Patatas Bravas and Chicken and Black Bean Stuffed Poblanos -- back to top
The peppers were from a recipe Meredith found here. We also mixed in some laughing cow (or the WW version) instead of the cheese. We made some other modifications but nothing too major. It was very, very good! We will do it again!
The Patatas Bravas was more of a "wing-it" type of ordeal after reading many recipes. It was basically onion and tomatoes with spices. The difference this time is that I pureed it to make it more of a sauce. It was also very good. And, we used Meredith's favorite potatoes (Purple Majesty). We found them at H-Mart so we didn't have to selectivity pick through the things at Trader Joes.
The points are difficult for the chicken, but it isn't high. For each pepper is probably 3 for the chicken, 1 for the cheese in it and on top, maybe 1 for the beans. So, 5-6 for each one isn't bad.
The potatoes were really just for the potatoes themselves so about 4 per person. Maybe 5

Quinoa Patties and Purple Potatas Bravas -- back to top

We made quinoa from the recipe below. Meredith put it together so she may have more comments, but we basically followed the base of the recipe though we needed a bit more egg. We also used gouda instead of the parmesan. We also used regular flour. Instead of frying it, we baked it like the zucchini fritters. We baked them at 440°F for 15 minutes, then flipped them and baked for another 10. I was prepared to have to really scrape but in the end, they came off nicely. They were really good. I really liked the thin parts that were extra crispy. The flavor was subtle which contrasted with the patatas bravas and its heat. It didn't help that my head/nose was stuffed so the flavors were even harder to discern.
The patatas bravas we more or less based on the standard except I also added some leftover canned sauce. I used a lot of cayenne and all of the called for paprika was hot paprika plus, I added some smoked hot. I also forgot the garlic and vinegar but I added a lot of onion and garlic powder. The sauce was good, but it was rather spicy. Again, being a bit stuffed up, made this strong flavor eclipse the quinoa.

Patatas Bravas and Mahi Mahi -- back to top

Meredith and I made this at her place. We made patatas bravas. We used the regular recipe for the sauce. Or at least we used it to inspire what we made. We didn't have anything but smoked paprika. Both hot and sweet but only smoked. We also used a bit (or too much really) of cayenne. We wanted to rush the potatoes a bit so we microwaved them for 5 minutes first the roasted them for about 25.
One different thing we did was to use paprika and other sauce-related seasonings on the potatoes. I do not know what difference it made, but the entire meal was extremely good. A tad spicy but very good. The potatoes were a mix of different kinds, including purple.
We also made a Mahi Mahi thing that came frozen and pre marinated. It was coconut and something but I do not recall what. We cooked it in the pan since we were using the oven already for the potatoes.
