Grilled Foods

We had friends over so I bought and grilled a bunch of different stuff.

For the veggies, I quartered zuchinni the long way and then sliced some long bell peppers. I tossed them with avocado oil, salt and pepper. They were decent but would have been better if they hadn't sat while grilling the other stuff.

So nothing really homemade or special but it made this easy and low key!

We made Grilled Okra with Spicy Chipotle Dipping Sauce [The Kitchn]. We used chopped chipotles in adobo making this much easier!

Breakfast Enchilada Pizza

Last night, we did make your own pizza and had leftover dough. So I made a breakfast enchilada pizza. I did it like Crispy Cheesy Pan Pizza [King Arthur Baking] with the dough ball. I did enchilada sauce on the bottom with Mexican Cheese Blend, green onion (the white parts), and sweet pickled jalapeños and scrambled eggs. Once it was out of the oven, we added the green part of the green onion.

It was good but too much dough. I probably could have halved it!
