We made Patatas Bravas but with tater tots, hence PaTOTas Bravas. I also cooked the tots a bit too long. And didn't make enough sauce!
And a Tortilla Española (Spanish Omelet or Spanish Tortilla). I followed the idea from Serious Eats but I used canned sliced potatoes and therefore less oil. I also didn't manage the flip and instead just used the broiler. It was pretty good though could probably have used more salt.

Greek Turkey Nachos using "Shawarma Seasoning". Biggest change is I sautéed the onions with the meat rather than serving them raw on top. I liked it more but Meredith prefers them on top and Caroline really won't eat them with the onions. So we'll go back to that.
Sauce made with dill, roasted garlic powder, and salt.
Not very pretty today. See 2022-11-04 for a better version

I made Tortellini with Sausage and Mascarpone [What's Gaby Cooking] for Meredith's birthday. I did 1.5x the recipe and used Roa's (whole can so a tad heavy on the sauce). I used tortellini and also some Cascatelli pasta. It was also loose chicken sausage.
It was, like last time, very good and very decadent.

Meredith and Caroline made Pumpkin S’mores Cookies. They followed the recipe pretty closely except they mixed marshmallows in and then also added them on top after reading it. The mixed in ones, did, in fact, get totally absorbed.
They were pretty good. Nice flavor to them. Maybe a bit of an odd texture but not bad.

Crispy Seared Salmon. A bit salty today and maybe a tad overcooked but still delicious.

This was inspired by one of the "Steed Food <place>" shows but I forget which. The idea was to mix Mexican chorizo with a burger. We prefer the soy chorizo so that is what I used. It was 1 lbs of 80/20 beef and a pack of Trader Joes Chorizo. I followed Smash Burgers [The Food Lab/Serious Eats] for cooking them (8 patties). It worked okay but they were large. And cooked a bit differently (plus, I had to handle the beef more than you're supposed to for burgers). We had them not-stacked but we did do open face. I did mine with an over-hard egg too!
They were pretty good but reminded me of some beef jerky I've made before. Probably the beef cooking a lot combined with the smoked paprika in the chorizo. They did brown a bit more but I expected that.
Meredith also made Smacked Cucumber in Garlicky Sauce [Every Grain of Rice] with home-grown cucumbers. Easy, delicious, and spicy!
