Great Northern Bean Falafel -- back to top

I made baked falafel, however, it would be more correct to call this baked bean patties. I was distracted as I was making it and opened a can of great northern beans instead of chick peas. Oh well, it still came out pretty good. I actually prepared the whole thing the night before since I knew I was going to be getting back on the later side. So, all I had to do was form them into balls, and bake.

They came out pretty good. They were easier to make and mash with the beans but also a bit wetter. I wouldn't aim to use the northern beans again, but it wasn't a big deal.

I made the standard falafel except that I forgot the garlic (both powder and minced). It came out very good today. A crispy outside with a nicely cooked inside and lots of flavor. I really feel like I have the falafel recipe dialed in to where I like it. I also made a za'atar and yogurt dip.

I actually doubled the recipe and froze half.

Manav wanted me to show him how to make falafel so we made this together. We followed the standard falafel recipe spretty much by the book. We made a double batch and cooked them both. The ones towards the bottom of the oven got more browned but both were fine.

We served them with a Za'atar dip (FF Greek Yogurt, Za'atar, salt, pepper garlic powder) and with store-bought hummus on whole wheat pita pockets.

We also made snickerdoodles following the recipe from last time. They mostly came out ok but were not consistently cooked. I moved the racks to the top of the oven but I don't think I left enough space. I staggered them when I put them in and one ones on the bottom shelf that had overlap cooked less than the others. So, when I left them in a bit longer, we got some browned ones. Next time, I need to leave more space between trays.

Also, we made 36 larger ones. We should make more smaller ones next time. It is better when they don't stick and when they are smaller. (FWIW, I also made Manav take most of them home!)20131018-111828.jpg

[Modified] White Bean Falafel -- back to top

We were again trying to cool with the same restrictions as 2016-01-22 so we came up with falafels.

I made my regular dough, roughly doubled, but with great norther beans and I made lentil flour (food processor). I used about 2/3 cup of the flour to try to counter the wetter beans. I also did most of the spices only roughly. And, I used some dried parsley instead.

I tried to waffle them but they failed. It stuck too much. Not sure what the root cause was, but it wasn't pretty. So, for the rest, I baked like regular falafel. This worked well. Of course, the bottom got much browner than the top. I wonder if I could sandwich trays to try to cook the top? I will look into that... (You can't really see it in the picture because of how I placed them on the plate but what is up was the bottom of the tray)

We served the with fried eggs and a quick dip made from greek yogurt with za'tar and salt.

Grilled Falafel with Grilled Tomatoes -- back to top

Experimentation with the grill continues. I tried using falafel dough I had frozen a while ago. I was a bit hesitant since the dough was super, super wet. That is probably from freezing it. Fresh may work differently.

Anyway, I actually tried two different things. I tried right on the plates and also on non-stick aluminum foil. You can see the clear difference in the photos below. For both, I did it on medium-high. The first side was not on long enough and the second was a bit too long.

Then I grilled the tomatoes. I had already pammed them and added salt. I grilled them on high/medium-high for about 2-3 minutes per side. At the same time, I heated the flat bread.

I made the usual falafel. I actually made it yesterday and made a double batch and froze half. It was pretty standard except I used apple cider vinegar instead of the lemon and I went heavy on the oil and spices. I actually made these changes to the recipe. Meredith liked it a lot and I thought it was pretty good too.

I also made kabocha squash (400°F 30 min w/ a flip 1/2 way). And Meredith made her normal Tzatziki
