Poached Eggs over Roasted Asparagus -- back to top

I wanted something fast and light. I roasted asparagus as I did on 2013-05-20 basically the exact same way. While that was going, I poached eggs like on 2013-05-01. Note that the time in the water was about 4-5 minutes. I thought they were overcooked but the yolks were still pretty runny.

The meal was pretty good. Kind of plain, but it was fast

Pasta with Ham and Broccoli -- back to top

I made pasta with steamed broccoli and ham for lunch. All I did was cook pasta (4 oz), steam a lot of broccoli and a cubed ham steak. I mixed it all together with cheese, garlic powder, salt, pepper and Penzeys Sandwich Sprinkle. It was pretty good and made a nice amount of food with only a bit of pasta. It made two nice sized lunch portions and a small portion I saved.

Salsa Pasta with Poached Eggs -- back to top

I threw this together with what I had and what Meredith brought with her. I made about 3 servings of pasta. While it was going, I sautéd an onion and a red pepper. I then added two small cans of chicken. I added the pasta, some of the pasta water, a bit of salsa and finally some 4-cheese blend.

I also poached eggs using the technique where you strain the very wet part out of the eggs. I guess these were fresh enough that there was very little of the wet part. I did cheat a bit and I used some vinegar in the water. I overcooked them a bit but there was still some runniness to it.

For a thrown together meal, this wasn't bad! (Next time, I'll skip the chicken. You barely tasted it and there was enough protein from the eggs)

English Muffin Pizzas -- back to top

Meredith and I were starving and wanted something fast. I defrosted wholewheat english muffins in the microwave and opened a can of pizza sauce. I also had pepperoni in the fridge. We made simple english muffin pizzas using the toaster oven on bake

English Muffin with Crab -- back to top

This was a fast breakfast. I fried an egg and heated some leftover crab with Old Bay and black pepper. We put it on an english muffin and topped it with half an avocado. It was fast and easy,

Salmon Burgers with Green Chili Sauce -- back to top

This was a boring but fast and simple meal (ie, perfect for a weeknight when you don't feel like cooking or making what was originally planned). We simply sautéed the frozen salmon burgers and served it on toast with green chili sauce.



Huevos Rancheros Taco Style -- back to top

It was already around 8:45 and we needed dinner. We also had some defrosted ground beef that we had to use so I made the regular huevos rancheros and then also added taco beef. It worked fine and was a good way to get some extra protein in there.



Indian Style Scrambled Eggs -- back to top

We had to be some place so this was a fast, easy, and healthy meal. Meredith made Indian Scrambled eggs from this The Kitchn recipe (local). She stayed pretty close to the recipe except skipped the cilantro and bird's eye chili (we were out cilantro and the bird's eye went bad) and used some Sriracha in place. She also did use the tumeric.

It needed some salt (she forgot to salt it as it went). Th ginger bites were actually really, really good.

We would do this again when we want something as easy as eggs but more interesting.



Flat Out Pizzas -- back to top

Meredith and I made Flat Out Pizzas. I made two different ones.

The first was supposed to be a reuben pizza. I tried to make Thousand Island dressing (halved) but I didn't have ketchup so I used BBQ sauce. Also, this recipe just isn't very good. I think I keep going back to it since I don't have dressing. But this one was particularly bad.

Also I used Trader Joes Pastrami which wasn't very good. Or at least not in place of corned beef. Overall, it just wasn't very good.

I also made one with BBQ sauce, cheese, and roasted peppers. Topped with an egg and Sriracha on top.

Meredith did something similar. She used vodka sauce with part-skim mozzarella cheese. She also topped it with a fried egg and some basil



Green Chile Chicken -- back to top

This was a super fast meal since we didn't really feel like cooking. I made green chile chicken by flattening and cutting two chicken breasts into pieces. I topped them with some salt and cumin. I then sautéed them and then added some white wine and a bit more cumin. After that cooked down, I added a ton of chopped of roasted green chile and (too much) lite cheese. That was really about all.

Super easy and really good. Maybe a bit too much cheese (and probably too much chicken). But other than that, and easy!



Salsa Chicken with Shishitos -- back to top

I had originally made three salsa chicken breasts to prep ahead but we decided to eat them tonight. I pounded out the chicken breasts and then topped them with salt, pepper, and Pace Salsa (Whole30 Compliant). I baked it at 375°F for 25-30 minutes until it was done. (actually, I went a bit too long).

I also made Shishito pepper using my recipe. I used some extra ranch dressing from the Cobb Salad we made (but didn't really write up, recipe here. Same as used for the Buffalo Chicken Casserole.

All in all, it was a very simple. but pretty good meal. And very easy too!

Update: Salad

We used the leftover chicken and sliced it up to be chicken on a salad. We made a dressing by mixing Pace Salsa with the Cilantro Sauce. It worked surprisingly well as a salad dressing.
