Lunch Tomorrow: Samosa Chicken Sandwich -- back to top

Meredith wanted to try something different...well, same considering the amount of samosa recently, but none-the-less, we made samosa chicken sandwiches.
We seasoned chicken with a wide range of spices including garam masala, curry powder, ginger powder, tumeric, cumin and some others. Then we sautéeded it and shredded it with a fork. We mixed in boiled potatoes (yukon gold), frozen peas and even more spices. We added some salt to bring out the flavors and some sriracha to give it a kick. We also added a bit of 1/2 and 1/2 to bind it. We wanted to use greek yogurt but we were out.
Just put it on Arnolds Rolls (pictured below) with some mint chutney. There was a bit leftover as well. Points below.

The peppers were from a recipe Meredith found here. We also mixed in some laughing cow (or the WW version) instead of the cheese. We made some other modifications but nothing too major. It was very, very good! We will do it again!
The Patatas Bravas was more of a "wing-it" type of ordeal after reading many recipes. It was basically onion and tomatoes with spices. The difference this time is that I pureed it to make it more of a sauce. It was also very good. And, we used Meredith's favorite potatoes (Purple Majesty). We found them at H-Mart so we didn't have to selectivity pick through the things at Trader Joes.
The points are difficult for the chicken, but it isn't high. For each pepper is probably 3 for the chicken, 1 for the cheese in it and on top, maybe 1 for the beans. So, 5-6 for each one isn't bad.
The potatoes were really just for the potatoes themselves so about 4 per person. Maybe 5

Stuffed Poblanos and Tomato-Zucchini Tian -- back to top

The main meal was the stuffed poblanos which we did about a year ago. Meredith did most of this so I do not know exactly, but I think we followed the same recipe except a lot less tomato sauce as we stated lasted time. They were very good except they needed more salt. I am copying the recipe below since I didn't last time.
The side dish was called Tomato-Zucchini Tian. We followed the recipe (copied below) except we didn't have eggplant so we skipped that part. We also didn't really have Herbs de Provence so we looked it up and just sprinkled the top (haphazardly) with
It was very, very good. I really liked it all cooked together. Maybe it was just us, but this also needed more salt. I also used yellow squash intermixed with tomatoes. While the dish was great, what was not great was dropping the soapy dish while cleaning it and shattering the ceramic (sad!!!)

Taquitos, Brussel Sprouts and French Onion Soup -- back to top

This meal came about because I had defrosted chicken but not really two servings worth on its own. Also I was craving soup. We didn't do anything special with the soup. It was pretty normal. A lot of onions. I probably should have used a bit more broth base but it was fine.
The taquitos were very similar to the ones I described on 2011-04-27 except without habanero or bell peppers. The real trick I think is to keep adding leftover liquid from pressure cooking the chicken. I add it, let it cook down, and then do it again as needed. They were very good, as usual!
Finally, the brussel sprouts were pretty standard. THey were very large. Also I cooked them at 375 instead of 400 and it was fine. Maybe even a bit better

This was the pretty standard taquitos but as usual, there is a lot of room to play. I do not remember exactly what I did (it was a while ago), but they came out great. Off the top of my head, I remember putting some carrots in (which you couldn't even taste but made it healthier) and some black beans (new idea). Other than that, the pretty standard onion, some corn, shredded chicken and two melted laughing cow cheeses to bind it all.
I again shredded the chicken in the mixer. However, in testing to see if it was done enough form the pressure cooker, I cut it into too small of pieces. That made it really hard to shred so I had to run it for a while. It didn't matter in this application since it was going in something, but I should be more careful in the future.
Also, I usually use a hot pan to warm the tortillas before rolling but this time I used the non-stick. It was even easier.

Taquito Cupcakes -- back to top

I was originally going to make taquitos, but I decided to "cupcake" them instead. Basically, it was all the usual. To make the cupcakes, I put down a layer of wonton wrappers, added some cheese, then another layer of wonton wrapper, then more filling (much less than first layer) and then a bit more cheese.
The filling was pretty standard. I sautéd onions (with too much oil, see note below on points), Then I added about half a cup of frozen corn. I added about half a cup of hot salsa. I also used some soy sauce instead of salt and some hot sauce. I made the shredded chicken using my standard technique. That is, about 1/8-1/4 inch of water with seasoning in the pressure cooker then cook on high for about 10 minutes. Then, shred with the mixer. After it was all mixed, I kept adding some of the pressure cooker "broth" to moisten it and let it cook down. Finally, I added 2 softened laughing cow cheese wedges

It came out a bit high, but I used too much olive oil. I will go lighter on it next time to save a good number of points.

Boring old Taquitos -- back to top

I attempted to make the pretty standard taquitos included shredded chicken. About the only other change was that I accidentally added way too much salsa. Plus, it was medium instead of hot salsa. It added a good amount of tomatoes which was nice. In addition to onion, I used a red pepper, some chopped mushrooms, and carrot slices (hey, why not add nutrients). We didn't have enough tortillas so I put the remaining filling into the glass bowls, topped them with cheese, and baked them too.
I think it has been better before, but this was still pretty good.

Buffalo Chicken Cupcakes -- back to top

I basically used the same idea for "cupcakes" as I have use many times before. This time, I made them buffalo chicken style. I sautéd onions and a green pepper, then I added the shredded chicken. I followed with a bunch of Franks Red Hot and then two laughing cow wedges. It probably could have used more Franks but I was weary of the saltiness.
As always, they were good. I like doing things cupcake style. It is easy and fun to eat.

Buffalo Chicken Pasta and Edamame -- back to top

This was a long time ago so I do not remember exactly what I did but I think I used a can of chicken and added sautéd onions, then added a lot of Franks Red Hot, the usual Laughing Cow and what not. I added the pasta and mixed it all together. I then used grated ricotta salata on top.

Buffalo Chicken and Zucchini cupcakes -- back to top

I made buffalo chicken cupcakes (or should I say kupcakes?) from this method. I did the usual poaching the chicken in the pressure cooker and then shredding it in the mixer. I added a tiny bit of Dave's Insanity but that was all it took to make these things like fire. They were really got but really hot.
I also upped the vegetable content by added thinly shredded zucchini to the filling. And a bunch of sliced mini-sweet peppers.

Chicken-Pasta-thing and Curry Roasted Cabbage -- back to top

This was another of my pasta-skillet-stuff creations. I pressure cooked a small chicken thigh and shredded it. I added that to well sautéd onions and garlic. I added the pasta and some water (from the pasta). I intentionally undercooked the pasta since it would keep cooking as I blended everything I added a laughing cow, some Franks Red Hot, some Sriracha and a buch of other stuff (I do not remember all). It was extremely good! Lots of flavor and pretty easy. Though with shredding the chicken in the mixer and the pressure cooker, there was a lot of cleanup for such a simple dish.
I also made the roasted cabbage from here but I added curry powder. It was pretty good as usual. I didn;t take a picture of it.

I made taquitos using the pretty standard method. I pressure cooked chicken (there was a lot), with lots of onions, peppers, garlic, and spices. I did the standard stuff with adding the water from pressure cooking to the chicken. I also used some hot pace. I put sriracha in the water which I think gave the chicken a bit more flavor. I did the laughing cow thing too.
I do not know if it was that I do not usually use these smaller tortillas (not sure which ones I used to use), but this made 10 of them. Each tortilla has lots of fiber and only 45 calories.

Taquito Filled Sandwiches -- back to top

I made this for lunch tomorrow. I basically took shredded chicken, with caramelized onions, poblano peppers and spinach. I again tried the fast caramelization but with a tiny bit of baking soda. It worked better this time. I also added laughing cow cheese. Basically, I made taquito filling but I used it on a sandwich. I also had a bit of extra.
I haven't tried the sandwiches, but the filling was very good.

I made pretty standard taquitos. They didn't really come out too good. I am not sure why, but I probably overcooked the onions and too much bell peppers. I used Trader Joes high fiber tortillas (1.25 points each). Normal pressure cooker chicken and used laughing cow. One thing that messed up the rest of the meal was not knowing the timing. I had never included it before. It is about 400°F for 15-18 minutes. Maybe I should have used more sauces and spices.
I also tried to make brussel sprouts in the cast iron pan.Because I wasn't sure of the timing of the taquitos, I kept having to mess with it, turing it on and off. I covered it and it basically steamed. I found something that mentioned balsamic vinegar so I tried using a bunch of that. It was still good all said and done, but mushy. I'd look into other recipes and methods (I looked at this one quickly while trying to do 1000 other things)

Buffalo Chicken and Veggie Stuffed Pepper -- back to top

The original plan was to make something like the buffalo chicken poblanos but I couldn't find poblanos and I only had a small piece of chicken. So I used green peppers and I made a filling with lots of vegetable fillers. First, I cut the pepper and baked it in the oven (425°F) while I was preppy the rest so it could pre-bake. I didn't time it but I'd say it was about 20 minutes. I made a filling with the following:
I used goat cheese instead of Laughing Cow wedges because I thought it would add more flavor. I didn't end up tasting it at all so I probably won't do that again. When this was all done, I filled the peppers, topped them with a bit more shredded cheese and baked them at 425 for half an hour.
It was very good but very wet. When I cut into the pepper, water basically poured everywhere. I ended up cutting it so it was basically like eating the filling with a bit more pepper. I still enjoyed it but I think I need to do a better job draining the drying the filling first. And maybe use fewer peppers in the filling so that the pepper shell's flavor didn't meld into it.
I also had a plain spinach salad.
